C'mon! Veganism is not only about avoiding animal products... It's about living integrally and close to nature... And canned beans and packed salad are hardly natural... You can do better than that!

Hi Anonymous —

We agree, however we intend to provide base recipes that are fast and cheap to make, as well as open-ended to promote creativity. We encourage people to substitute, exclude, and add the ingredients they prefer. We find that many new vegans find involved recipes and soaking beans intimidating. So we take recipes and simplify them.

I'd like to respectfully disagree with Anonymous. (But I'm not starting an argument, cuz I'll probably never check this comment section again.) This looks like a great salad and there are a lot of different routes you can go with it. For some of us, it's a quick DIY meal or a quick Subway run. If you do have more time, substitute snap peas and real artichoke hearts.

Besides, most vegan cookbooks I pick up call for some pricey vegan replacement product in every recipe. This is refreshing.

I'm a vegetarian stoner, also happen to be lactose-intolerant. This blog MADE MY LIFE! It's so hard to find delish, fast vegan foood when your baked. <3

I made this last night for my hubby and myself. We both loved it. I used balsamic vinegar. Vegan Stoner, please don`t be discouraged by purist commenters. A vegan diet done imperfectly still blesses the earth, animals, and your health.
