I convinced my non-vegan friend to have a vegan cook off... I made this and she made the vegan rice pudding. It was the best (maybe not healthiest :)) vegan meal I have had in my two years of being one! THANKS!!!
You people are crazy, this recipe doesn't work, french toast has egg for a reason...soy milk does not solidify at any temperature! I am all for vegan cooking, however this has clearly never been cooked by anyone every...it tastes like bread covered in soy milk.
We're sorry if the recipe didn't work for you, it could just be personal taste.
We suggest either using more stale bread (it soaks up more liquid) or add a bit of cornstarch or banana to the juice mix to get that gooey outer texture.
I made this tonight for dinner, and no kidding, it was the BEST French toast I've ever had. I love French toast, it has been my favorite food my whole life. In fact, since becoming vegan five years ago, I went through stages where I would eat eggs because I missed them so much.... (Never again! I know better now..) Anyway, my husband, toddler and I devoured it so I have to make more after the little one goes to bed. I'm addicted!
The first piece I tried to make was too gooey- I think it soaked up too much of the juice. So for the second piece I toasted it first to "harden" the outside a bit so it wouldn't soak up so much juice. It worked much better! But burnt a bit- so I'll try turning down the temp next time.
We made this for breakfast and loved it! Even my 2 year old son (who is not vegan) enjoyed it. We used almond milk instead of soy, and omitted the powdered sugar b/c we were out. It took a long time to cook to the right consistency, and some of the bread fell apart a little, but it was no big deal. It still tasted delicious. We served it with pure maple syrup and chopped banana. Thanks for another great recipe!

I made this with some stale homemade lemon poppy seed bread. Sooo good!

Use any size glass depending on how much you intend to make, just make sure to use the same one for all measurements.
