Plantains are usually larger and darker than bananas. They are not as sweet as bananas, but either one will work in this recipe.

I had been trying to figure out what plantains went best with and by coincidence (or was it?) you guys had posted this. It's absolutely perfect and I never would have thought of it. I never thought of plantain chips with guacamole. Made it last night as a side for the corn salad sandwich and it was very good. The sweetness of the plantain worked really well with the guac. I put a bunch of cilantro and lemon juice in it. I did notice that after baking for 5 minutes on each side, at 400, that they were still very soft and not browned at all. I ended up baking them for nearly 25 minutes. If I make them again, I'll likely up the temp to 450 or 475
