I made this but used fresh veggies (instead of frozen ones), tomato sauce (instead of ketchup) and bread crumbs (instead of crackers) and no apple sauce (because I had none).
The result was amaaaazing!!!!!

This looks so amazing and I'm dying to make it but my roommate is allergic to nuts! Can anyone suggest a substitute? Perhaps just add extra crackers to replace the texture of the walnuts?

For something crunchy you might try a fresh veggie like celery. We're not sure if your roommate is allergic to chestnuts, but we think that might be an interesting ingredient to try. Also, your idea of extra crackers could work fine.

As the only vegan in my household I opted to make single servings of this delish loaf by separating the mixture into cupcake tins, then freezing them for awesome leftovers. I also used tomato paste instead of ketchup and a made from scratch vegan bbq sauce instead of applesauce. Yum! Vegan stoner rocks!

i made this for the second time tonight, though this time in the spirit of "the vegan stoner" and i totally forgot to add the crackers. it turned out well enough (the first time it was incredible), but i would suggest one add the crackers. anyways, now i get to sit here and enjoy these delicious omitted crackers~

Thanks for sharing such a great recipe! I made the lentil loaf for both Thanksgiving and Christmas. It was a serious hit! It is so good and easy to add various mix-ins. I don't think you can go wrong. I added wild rice, mushrooms, celery, corn and carrots. I used pine nuts and pumpkin seeds in place of walnuts, bread crumbs in place of crackers, and tomato sauce in place of ketchup. Stellar! This recipe has become a fast favorite and know it has found a home within our menu rotation.

Okay, I just made this and messed up by adding way too much tomato sauce (in place of ketchup) to the mix. Even after almost two hours of baking, I knew it wasn't going to toughen up, even after I added more lentils and crackers. BUT, it was an awesome mix-up because I ended up with great sloppy joes! My non-vegan mom is eating it up right now.

Also, in place of frozen veggies, I chopped up some mushrooms, baby carrots, and celery and tossed in some curry.

Well my wife and i have tried two dishes from this site. Unfortunately, the dishes were terrible. We tried....back to proper vegan cookbooks it is. Maybe better receipes and less "greens" while writing them would go a long way.

Hi Anonymous,

The amount of calories depends on the brands, amounts, and types of ingredients you use. Therefore, we do not list caloric content.

We suggest counting your calories as you cook or add the caloric content of each specific ingredient used. For a healthier version try substituting crackers for quick oats, brown rice, quinoa, or another whole grain. Depending on you dietary needs use more lentils and less vegetables or vice versa.

I was skeptical when i made this. i used fresh veggies since all i had frozen was brocolli. i also added nutmeg as that is my secret weapon in nearly everything. but i think even without my modifications it still would have been delicious. it had a unique savory flavor. not exactly like "meatloaf" but uniquly tasty.

Hi Anonymous,

We used a 9"x5" bread pan and tightly pressed the lentil mixture into the bottom of the pan.

Try adding more crushed crackers or a spoonful of flour. The loaf also may need to cook a little longer, ovens tend to vary. Hope this helps!

I made this yesterday and it was deeeelicious! I didn't have an onion, but I did have dried onion and dried chives, so I added a gratuitous amount of those. I was worried it might be a little too sweet with the ketchup and applesauce, so I added some celery salt and pepper as well. It's the first time I've ever made something like this and I'm so pleased with it :) Love how simple it was. Thank you!

Again, we think adding more crackers and really packing it in to the pan will help to keep it from crumbling. Also, not cooking it for so long might keep it moist and together.

This recipe quickly became one of my favorites and does get shared A LOT! ;) I find that adding just a lil more ketchup ensures it being moist when coming out of the oven, and for a twist, add BBQ sauce to it for a smoky flavor!

Yum yum yum. Loved it. I love veggie loaf recipes. I used quinoa instead of lentils, tomato sauce instead of ketchup (and added about half of it to the mixture). My frozen veggies were spinach and peppers. It was fantastic.

I made this last night for dinner, and am proud to say that it was my most successful vegan kitchen experiment to date. This was FABULOUS - more flavorful than any meat loaf I have ever eaten, EVER. My carnivore boyfriend literally licked the plate clean and was upset there wasn't more. This will become a recipe in regular rotation in our kitchen... I am now officially addicted to your blog! This is so yummy. But for my topping I use brown sugar mustard and ketchup also I put some topping in the middle. Super delicious recipe. Even my non vegan partner, and non vegan family liked it.

I've now made two recipes on this site, this one and the Chilaquiles. This recipe is awesome. So easy to make. I just set some dry lentils to cook in a slow cooker for a couple hours and then mashed everything up and stuck it in the oven! Soooo delicious! Love this site. My boyfriend & I became vegetarians 2 years ago and haven't really come across any recipes that we "loved". I have to say, we LOVE this dish! It's amazing. Let's try this again. I wrote a raving review and accidentally erased it.
So, I had my doubts about this from the beginning (even before I added the whole bag of lintels and had to improvise...the whole 2 cups dry doesn't equal 2 cups cooked thing....I swear I don't smoke) but my worries were unwarranted. This was definitely one of the best vegan meals I have ever made. It definitely hits the non-vegan spot in me. I made this in muffin tins b/c I don't own a loaf pan. I also used the steak sauce and tomato sauce in place of the apple sauce and ketchup (the fiance hates ketchup) and added a small swirl of sriracha (spelling?) sauce on top to add a little kick. The guy just went back for THIRDS! I served this with homemade mashed potatoes and the two are a perfect pair. Thank you so very much for these amazing and simple recipes.

I have made this several times. For thanksgiving I made it as our meat alternative. I cooked it in muffin tins for easy serving. I made some changes that were really tasty for the season. I have found that slightly overcooking the lentils helps the loaf set. I used rolled oats instead of crackers, used fresh carrots, cranberries, and celery instead of the frozen veggies and added vegan Worcestershire Sauce. I also made a different glaze. I mixed ketchup, balsamic vinegar, vegan Worcestershire Sauce, maple syrup, and dijon mustard. it went over really well!! It wasn't too fancy, was just as easy, and a great fit for the holiday.

SO good! I used a frozen okra, corn and tomato bag I had left in the freezer. The okra was a DELICIOUS addition. Also used crackers AND breadcrumbs, a little bit of dales seasoning, a spoonful of tomato paste, half the amount of apple sauce, the 2 spoonfuls of ketchup, and a small splash of shiracha sauce. Cooked it up in muffin tins with a dab of ketchup on top of each. This was so easy and so yummy! My non-vegan husband gobbled it up and has packed the leftovers for lunch tomorrow! Thank you!

If you use fresh veggies you should cook them first before adding them to the mix or else they will come out with a lot of bite and tender is best. Onions as well you should cook them for a bit to soften them up.

Hi Gary, thanks for the question.

Ours took about an hour and a half, but the cooking time varies drastically based on what type of lentils you use. Some people buy them dry, while others buy them pre-cooked (canned/frozen). After the lentils are cooked, however, there is very little preparation involved. Bake time is 40 minutes, and you're done!

Since we encourage people to improvise and replace ingredients based on what they have available, we have not previously included calorie listings. We notice people have made this recipe with various vegetable combos and toppings. Some people use BBQ sauce instead of ketchup, and the amount of ketchup on top seems to vary by personal preference. We would recommend typing "Calorie Calculator" in a search engine to find a site that specializes in determining meal calories based on the specific ingredients you choose for your Lentil Loaf.

I just tried this out for the first time and mine came out very tasty but the onions were still crunchy and overall it was still like a mushy blob of lentils. Next time I'll cook the onions ahead of time and try more crackers like the previous comments are suggesting.

Excellent flavor! I overground/mashed mine I think. "A handful" or "a spoonful" leaves me a little flummoxed. A handful of crackers before or after they're smashed? A teaspoon or a tablespoon. I will keep trying though!

Hi helenabucket,

The measurements don't need to be exact in this recipe, but generally a spoonful is about a tablespoon. Any soup spoon you have around will do.

Grab a handful of the crackers before crushing them. It should come out to at least 1/4 cup.

The whole idea is to set exact measurements aside and go with your instincts. If you love ketchup or walnuts, put lots! Just dig in and make something you love.

To get to your specific issue, though, is the overall texture too mushy for you? It might be overly ground, like you were thinking, or it might have slightly too much liquid. If the problem is that it's not sticking together as a loaf quite enough, try mashing it down harder in step 4. In any case, feel free to write back so we can help you get to the bottom of this.

This was fantastic and soooooo easy!!! I have been making another lentil loaf recipe that is good, but VERY fiddly and time consuming, with a LOT of ingredients. All that fussy-ness seems to defeat the purpose of the simple earthy goodness of lentils. This recipe has all the yummy flavors, and is so easy. I eyeballed all the ingredients, did a bit of tweaking based on what I had in the larder, and it was still amazing! A total win!!!!
