That's a great alternative to the classic potato-leek soup (that I can't stomach anymore!). Great combination of flavors and also great nutritional value this soup has!
just made this! it was so delicious! i did everything the same except used cauliflower and broccoli instead of just cauliflower(because i bought a bag of them mixed) and the cabbage had some carrots, and more broccoli shreaded in with it. i kept a bit of the water in the pan from the boiled veggies(mostly because it was hard to pour it all out) and it came out thinner, so i just simmered it for a bit. it doesn't say to top with chives but it looks like that is what was done in the picture, so i did that and it was the cherry on top of the cake! i highly recommend (O:

The potatoes, cabbage, and cauliflower are drained before adding the veggie broth. If the soup is too thick for you, add more veggie broth or water if you are using a very salty broth.
My entire family is trying to go vegetarian and I am trying to go back to being a vegetarian. I am making this soup as I speak. The smell coming from the kitchen is driving me mad. I can't wait to try it. I will be blogging about it here.
