Thanks for your question, knic. If you cooked the veggies thoroughly in Step 3, then you don't need to cook them very long at all in the sauce. Some people like their veggies cooked down more than others, of course. If you're one of these people, it certainly wouldn't hurt to simmer them in the sauce for a bit longer. Thanks again for the question.

So happy to have found your blog, because you truly show that vegan meals don't have to be super complicated or call for impossible-to-find ingredients (seriously, some of them are harder to find than a bottle of tears of Jesus). Your recipe is good, but it's missing something...a wedge of lime! A little acidity makes food much more balanced and interesting for this particular dish.

Just made this for dinner with brown rice instead of noodles and more veggies (namely peppers, cucumbers, and tomatoes). Delicious! The sauce is so simple and hearty. I will be making this again for sure ^^

Just did this...except I didn't have anything like zucchini, so I used grated carrot and chopped cauliflower. Then I didn't have rice noodles, so I used linguine. Then I couldn't find the soya sauce, so I said fuck it and used entirely different spices and some black beans and made an east African-style stew-on-pasta thing, and it was delicious.
So I didn't actually end up making this at all because my pantry fails, but your recipe inspired a tasty dinner anyway. Thank you, as always!

This recipe sounds great, but I tend to make them a little dry. I don't know what i'm doing wrong. I made the southern bowl in the cookbook and it came out really dry and kind of sticky. Like peanut butter. Is there something I can add to it to make it more saucy. I like the chickpea curry recipe in the book also a lot. The problem I had was that it was so hot. I kept adding almond yogurt until it became bearable to eat. It was so delicious then. I will definitely try these recipes and wish you would do another cookbook too. I love the easy recipes and the pictures help me a lot. I am a Fish out of water in the kitchen. Thanks!

Hi Wharf Rat,

Are you cooking on high heat? What kind of pan are you using? Or are you using a pot?

The easiest way to fix cooking something that has a sauce that ought to be creamy and not clumpy or dry would be to add more liquid as you go and turn down the heat. I'm often cooking on high heat as well, too impatient for the wait. To cook on high heat for recipes that have a sauce and cooked solids is to make sure the solid items are thoroughly cooked first. Then add the sauce, but turn down the heat or better take it off the stove. Otherwise, the liquid will evaporate.

Furthermore, check your peanut butter. Organic, have to stir, peanut butter isn't always the best. Basically, if it's clumpy when you bought it. It's going to work like that. Don't be afraid to use chunky peanut butter, but try to get the creamy kind if that makes sense.

As for the Southern Bowl, try all the above, sans the peanut butter and milk. You can always add a little veggie broth or ketchup with some extra spices if it gets too dry.

This is pretty good, but it gets better if you: 1 - shred the zucchini, 2 - do not add water, or just a bit (the zucchini will release water already), and 3 - pour the juice of half a lime in the end.

I tried out this recipe and it is now a go to favorite! I'm newly vegan and your recipes have really helped me out when I want to have a yummy hearty vegan meal. Is there any way I could thicken up my sauce? It's so delicious but I as well as some others in the comments section tend to make it too dry. Overall it was absolutely delicious thanks for another amazing recipe!

Hi Lavender and Green Tea — The simplest way to thicken the sauce would be to add less water. One of the commenters said they didn't use water at all. A thicker peanut butter might also do the trick. Let us know if that still doesn't help and we'll brainstorm other ideas.

I made this and it was right good. Made it with fussili gluten free... but added too much cayenne. It was good but made my nose run O.O

I used gluten free fussili instead of noodles (it's what I had int he cupboard) but I used too much cayenne. It made my nose run for the spice, haha!
