Hi Court. We're saving a few dishes for the cookbook, and lasagna is one of them. We did post a spaghetti squash recipe here.

Maybe I'll tinker this evening with some pasta noodles. Thanks for the suggestion.

I will buy your cookbook the nanosecond it is available. This looks soooo yummy. I haven't been able to find a decent vegan breakfast sandwich anywhere. This looks like perfection. Adding zucchini (instead of fake meaty stuff) is brilliant!

Hello! My name is Laura and I have just discovered your blog. I'm from México and lamentably I must say that here is a little bit difficult to find high quality vegan products, for example, I'm having a hard time looking for the "nutritional yeast", so I would like to ask you if I can use something else to prepare the recipes in which you use thit product. Thank you very much, I have became a fan of your meals!

In this recipe, you can substitute it with any sort of seasoning you prefer such as garlic powder or just soy sauce.

As for finding a substitute for nutritional yeast in general, brewers yeast or yeast extract are said to work. I can't vouch for either since I have never tried either, but I'm told that brewer's yeast is slightly bitter.

I would suggest your safest bet is to grind up some raw cashews and play around with them as a substitute. Nutritional yeast just helps give things a slight "cheesy" taste and cashews oddly do the same.

This is my go-to breakfast, Except I use Tofutti slices, lentil sage deli Field Roast & no zucchini. So yummy!

The sandwich looks very good. I love nutritional yeast and use it in a terrific "mac and Cheeze" recipe from "vegan yum yum"...a must to satisfy that particular craving. I believe your sandwich will satisfy the egg sandwich craving I often have. I thank you, Stoner friends!

I just made this sandwich, and I loved it! The tofu really tasted like a fried egg. I didn't have any vegan cheese, but it was still amazing. I added some sliced avocado, spinach, and hot sauce - delicious! I saw your cookbook in the store yesterday, and I wish I had bought it.
