I love this because it looks good and seems fairly simple to make. My kind of food!

Looks so simple and tasty. This is my kind of meal because I love Mexican food but usually don't like to eat flour tortillas.

Yummy, easy lunch today...added chopped cilantro, and diced tomatoes.

Looks AMAZING. We dont get Vegan Sour cream in South Africa. Anyone have a simple recipe to share...they all so complicated when I google them LOL.
Thanks for sharing.

I also don't have vegan sour cream. Is there any alternative to use ?

Hi Anonymous,

There are a number of homemade vegan sour cream recipes online you can try. Our upcoming cookbook (release date Sept. 3) will have a recipe for vegan sour cream as well.

You can also try replacing the vegan sour cream with soy cheese or fresh cooked veggies.

We hope this helps.

I tried this recipe the other day minus the vegan sour cream and it was amazing. So quick and easy, yet delicious too! I've definitely added it to my list of favorites.
