Purchased your cookbook. Love it! Have gifted it once already. That said, I am having a heck of a time finding seitan. What else could I use as an alternative to keep the munch train rolling?

Hi Wildling,

Sorry you can't find seitan. Try using mushrooms cooked with a bit of soy sauce — or tempeh, fried tofu, veggie sausage (check to make sure it's vegan), or your favorite roasted veggie. A good way to roast any veggie is to chop them and place them on a baking sheet, drizzle a bit of olive oil and salt on them, then toss and bake at 420ยบ for 30 minutes. Another option is to buy soy curls or seitan online.
